The frozen seafood supply chain is one of the most complex food logistics systems in the world. All seafood begins at one of two origins: the open ocean (wild-catch) or a managed farm (aquaculture). Each sourcing method has distinct supply chain characteristics that affect availability, pricing, and consistency.
Wild-catch seafood is harvested from oceans, seas, and freshwater bodies using methods like trawling, purse seining, longlining, and gillnetting. Key species include tuna, mackerel, sardines, squid, octopus, and blue swimming crab. Wild-catch supply is inherently seasonal and weather-dependent, which means prices fluctuate more than farmed products. Responsible wild-catch operations follow government quota systems and may carry MSC certification for sustainable fishing practices.
Aquaculture provides a more predictable, year-round supply. Major farmed species include vannamei shrimp, black tiger shrimp, tilapia, pangasius, salmon, and carp. Farms range from small-scale rural ponds to large industrial operations with hundreds of hectares. Certified farms follow standards like ASC, BAP, or GlobalGAP, which cover environmental impact, animal welfare, feed management, and social responsibility. Aquaculture now accounts for more than half of all seafood consumed globally.

Once raw material arrives at the processing facility, it undergoes a series of steps to transform it into export-ready product. All processing must occur in HACCP-certified facilities that maintain strict hygiene and temperature controls.
Raw material is inspected upon arrival for freshness, temperature, and quality. It is then sorted by species, size grade, and quality classification. Substandard material is rejected at this stage — this is the first critical control point in ensuring product quality.
Depending on the species and target product form, raw material is headed, gutted, filleted, peeled, deveined, or otherwise processed. This stage requires skilled workers and modern equipment. For shrimp, it may involve peeling and deveining machines. For fish, automatic filleting lines with X-ray bone detection ensure clean, bone-free fillets.
The freezing method significantly impacts product quality, appearance, and usability. IQF (Individually Quick Frozen) freezes each piece separately, typically in a spiral freezer or tunnel freezer at -35 to -40 degrees Celsius. IQF products are free-flowing — you can take out exactly the quantity you need without defrosting the entire package. Blast freezing (block frozen) freezes product in blocks, typically 1kg or 10kg, in plate freezers or blast freezer rooms. Block frozen products are more economical and are common for food service and industrial applications.
After freezing, products receive a protective ice glaze, are packed into retail or bulk packaging, and labeled according to the destination market's requirements. Packaging must protect the product during transit while meeting regulatory requirements for nutritional labeling, allergen declarations, and traceability information.

After processing, finished products are transferred to cold storage warehouses maintained at -18 to -25 degrees Celsius. Cold storage serves as a buffer between production and shipping, allowing for order consolidation, inventory management, and quality hold-and-release testing. A well-managed cold storage facility monitors temperature continuously, uses FIFO (first in, first out) inventory rotation, and keeps detailed lot tracking for traceability.
Cold storage capacity is a key indicator of a supplier's scale and reliability. Insufficient storage means production delays or forced shipments of product that has not completed quality testing. Before a container can leave the origin country, a complete documentation set must be prepared. This includes health certificates from the competent authority, certificates of origin, commercial invoices, packing lists, bills of lading, and certificates of analysis. For certain markets, additional documents are required — EU imports require a catch certificate for wild-caught species, while Halal certificates are mandatory for many Middle Eastern and Southeast Asian markets.
Documentation errors are one of the most common causes of shipment delays and port rejections. A single mistake on a health certificate can result in your container being held at the destination port for days or weeks, with demurrage charges accumulating rapidly.

Frozen seafood is shipped in refrigerated containers (reefers) — insulated shipping containers with built-in refrigeration units that maintain a set temperature throughout the voyage. Standard reefer containers come in 20-foot and 40-foot sizes. A 40-foot high-cube reefer can hold approximately 22-28 tonnes of frozen seafood depending on the product and packaging.
Before loading, the reefer is pre-cooled to the target temperature (-18 degrees Celsius or lower). Product is loaded quickly to minimize temperature excursion, and the container's data logger records temperature at regular intervals throughout transit. Upon arrival at the destination port, the data log can be downloaded to verify that the cold chain was maintained during the entire voyage.

The final leg of the supply chain begins at the destination port. Once cleared by customs and port health authorities, the container is either delivered directly to the buyer's cold storage facility or transferred to a third-party cold store. From there, product moves through the distribution network via refrigerated trucks to retail stores, food service distributors, or industrial food manufacturers.
Temperature management during last-mile delivery is the buyer's responsibility, but it is also where many cold chain failures occur.
