CPTO — Cooked, Peeled, Tail-On
Fully cooked, peeled, and deveined with tail on. Ready to eat or use in cold preparations such as shrimp cocktail and salads. Premium pricing due to additional cooking step.
Butterfly Cut
Shrimp is split along the back and opened flat. Used for tempura, grilling, and premium retail packaging. Available raw or cooked.

When evaluating vannamei shrimp quality, professional buyers look at the following characteristics:
- Color uniformity — Raw vannamei should be translucent grey-white to light pink. Reject lots with excessive dark spots, black heads (melanosis), or yellowing.
- Texture — The flesh should be firm and resilient. Mushy or soft texture indicates quality deterioration or improper handling.
- Odor — Fresh frozen shrimp should have a mild, clean ocean smell. Any ammonia or off-odors indicate spoilage before freezing.
- Shell integrity — For HOSO and HLSO, the shell should be intact without cracks, soft spots, or excessive shell disease marks.
- Uniformity of size — Within a given count range, the individual pieces should be reasonably uniform. Poor size grading (mixing small and large in the same count) is a common quality complaint.
- Glazing — A thin, even glaze of 10–15% is standard for quality protection. Excessive glazing (over 20%) artificially inflates the gross weight and reduces the buyer's net product value.
- Deveining quality — For PD and PDTO forms, the vein should be fully removed without excessive cutting into the flesh.
- Foreign material — No pieces of shell, antennae, legs, or other foreign matter in peeled products.
Freezing Methods
The freezing method significantly impacts product quality, appearance, and pricing:
IQF — Individually Quick Frozen
Each shrimp is frozen individually in a blast tunnel or spiral freezer, then glazed and packed. IQF shrimp are free-flowing and can be portioned without thawing the entire pack. This is the premium freezing method and commands higher prices.
Block Frozen
Shrimp are arranged in a pan with water and frozen as a solid block, typically 2 kg (4.4 lb) blocks. More common for HLSO in Asian markets. Lower freezing cost but the buyer must thaw the entire block to use the product.
Semi-IQF
Shrimp are frozen in a single layer without water, resulting in pieces that lightly touch but can be separated without full thawing. A cost-effective middle ground between IQF and block frozen.
Packaging Standards
Standard packaging configurations for export:
- Retail IQF bags — 250g, 500g, 1 lb, or 2 lb resealable bags for consumer retail.
- Food service packs — 1 kg or 2 lb IQF bags, packed 10 per master carton (10 kg or 20 lb).
- Block packs — 6 x 2 kg blocks per 12 kg master carton, or 5 x 4 lb blocks per 20 lb carton.
- Bulk IQF — 10 kg or 20 lb bags for reprocessors who will repack into their own retail formats.
